Originally from Toulouse, I am the son of a hotelier, and I have been passionate about the restaurant and wine trades since a very young age. In 2000, on January 1, at lunch, I met the greatest Chef of all time, … when I was 11, I visited his kitchens in Collonges with Mr Paul. A click, a passion, it all starts there. The Plaza Athénée allowed me to consolidate my experience, awakening in me a real vocation for wine. It is therefore in parallel with my training school, that I am preparing a diploma at the University of Wine in 2009 and the WSET in 2020. It's with the greatest Chef that I had the opportunity to work. Gordon Ramsay, Alain Ducasse, and Yannick Alléno...it's the latter who will take me on a new journey, to discover the wines of the new world as restaurant manager and head sommelier. My last challenge was to create a 100% Italian wine list for a 3 toque G&M restaurant, as director of food and beverage.
